Bacon Peanut Butter Chocolate Chip Cookies

When I smell bacon, I think of one thing: cookies. Yep, cookies. Because why not? Also, for the sheer pleasure of it. Everything's better with bacon. Peanut butter, for one thing. And chocolate, mostly. Have you ever had bacon and chocolate? Absolutely a divine combination. So why not cookies featuring our culinary triumvirate?

And besides, there are oats in this recipe. They'll counteract the bacon. Kind of.

Goat Cheese Blondies

Blondies may well have been the original brownies--although the exact details of culinary history are pretty smeared at this point. Still, it's thought that this delicate cake with chocolate bits may have been the precursor to its more chocolate-y cohort.

Lunchbox Brownies

When we were kids, back before the crust of the earth hardened, brownies were lunchbox fare. These days, there are probably few kids with brownies wrapped in wax paper in their lunch boxes. Shoot, few kids even have lunch boxes. We might be a tad out of date.

Still, we know people take brownies on the go: to church, work, the kids' soccer matches, or social gatherings. So in our on-going quest develop recipes for great chocolate recipes, we wanted to have one recipe that was a go-to for brownies that 1) travel well, 2) store well on the counter, 3) freeze well, and 4) are the exact median spot between dense fudgy brownies and airier cake ones.

As you can see, Bruce brought these to one of his knitting classes. Sure enough, they traveled well. And they stored well, too. At least, the one that was left over did!

Goat Cheese Brownies

Recipes are like boyfriends: they start out fine and then either lose oomph or become obsessions. If you don't just make a recipe once and forget it, you end up showing it off to everyone you know. The thing becomes your stand-by. Until you start fiddling with it. And changing it. "Sheesh, it'd be even better if it had. . . ." Voilà: full-on obsession.

So it's been with brownies in our chocolate project. Somewhere along the way, Bruce and I got obsessed. And started fiddling. And ended up with goat cheese brownies. Yep, goat cheese. Just because. Just because you can substitute goat cheese for some of the butter in baking recipes. Just because if you know us, you know we're all about goat. Just because goat cheese adds rich, somewhat savory, almost umami notes to chocolate, notes that'll knock your socks off. Just because.
